- 2 Tablespoons Extra Virgin Olive Oil
- 2 Tablespoons Balsamic Vinegar
- 2 Tablespoons Chopped Fresh Parsley
- 1 Teaspoon Grated Orange Zest
Steps
- Preheat oven to 425 F
- Toss Noodles in a Bowl with Olive Oil & Vinegar
- Season with Salt & Pepper
- Spread Beets in an Even Layer on Baking Sheet
- Roast Beets for 20 Minutes, Stirring Twice
- Sprinkle Parsley & Orange Zest Over Noodles & Gently Incorporule
*For a crispier noodle, roast for 10-15 additional minutes, stirring frequently.
